Only a few days old and Moss is becoming one of Edinburgh’s most talked-about dining spots. Helmed by Chef Director Henry Dobson, this 26-cover restaurant is all about celebrating the best of Scotland’s ingredients with a sustainable, seasonal approach.

The minimalist dining room, co-designed by Henry and his artist wife Akiko, is a work of art. It features handcrafted tables made from wind-fallen Lime trees and bespoke ceramics created using clay from their family farm in Angus. Even the walls tell a story, textured with paint made from ash sourced on-site.

The constantly evolving menu is super creative, subliminial, and pushes the limits of what is possible with Scottish ingredients. And Food geeks will love it. Here, you can expect ceviche cooked with wild sorrel acid; duck smoked with shavings from the dining tables; Garum focaccia with beef dripping and bone marrow, and the fluffiest chiffon cake this side of Japan. The drinks list is as intriguing as the menu with British-made natural wines, low-intervention beers, and house-made kombuchas and infusions.

Moss is pure and simply stunning. Open Wednesday to Sunday for lunch and a la carte dinner service, we recommend you book a table whilst you can.
